Our Country Store Our asparagus is always available at our Country Store while we are picking. It  is located on our farm just 10 km. west of Innisfail off QE#2 on the Cottonwood Road which is paved.Our shelves are brimming with home grown & home made goodness.  We offer farm-direct seasonal farm gate sales of our home grown sweet and tender asparagus and many other seasonal veggies, preserves, Angus beef, soups  and pies so if you are driving by, be sure and stop in.Open 8 AM- 8 PM daily May 15 – Sept 30

Our local Asparagus this weekWe are picking our asparagus field daily. The yields are a little better than last week.We have had several very cold nights with the low temeratures dipping down to very near freezing. Fortunately, we have managed to miss any frost.The asparagus that we grow in our cool climate has an amazing intense flavor and is very sweet. |
When we will stop picking our asparagusWe hand pick our asparagus field daily starting whenever in May the soil warms enough to encourage the roots to start sending up tender delicious shoots. The picking season is very short, we will only be picking until about the end of June.

Every time we pick a spear, the root sends up another one. This takes strength out of the plants. When all of the spears are very thin, that is an indication that the plants are getting stressed. Also, the plants need eight weeks of frost free weather in their fern stage after we quit picking.
We will be stopping picking about the end of June if all goes well. |
Breakfast Television
I was invited to go on Breakfast television in Calgary this morning. what a fun experience. I made:
Grilled Prosciutto & Provolone Asparagus Bundles
This is our daughter, Angie’s favorite asparagus recipe. It is very easy, but also very impressive.
24 Â Â Â Â Â Â Edgar Farms asparagus spears
2 Tbsp.    extra virgin olive oil
¼ tsp.  freshly ground pepper
12 Â Â Â Â Â Â thin slices prosciutto
12Â Â Â Â Â Â Â slices provolone or havarti cheese
Preheat BBQ or grill to high & lightly oil. Toss asparagus with olive oil. Wrap 2 asparagus spears with a piece of cheese, then a piece of prosciutto, allowing ends of asparagus to be exposed. Place on grill, close lid and cook, turning often until asparagus turns bright green and is tender-crisp.
Alternatively, place on cookie sheet and bake uncovered at 450°F for 6 to 9 min. rolling around a few times.

Who we areEdgar Farms is a 6 generation family farm west of Innisfail Alberta. Back in 1986, inspiration to start diversifying into the locally grown consumer direct market first came from tasting the intenseness of the flavour of asparagus grown in our family garden and the desire to market direct to consumers. no one else was growing asparagus in our weather challenged climate so we gave it a try. we now harvest a 21 acre patch of asparagus every spring which, due to our unique cool Alberta spring nights and optimum sandy soil, has incredible sweetness and amazing flavour. |
